Crispy Shaved Brussels Sprouts

INGREDIENTS

  • 1 lb brussels sprouts, shaved (Use a food processor or thinly slice. You can also buy them shaved at the grocery store)

  • 2 Tbsp vegetable oil (another heat safe oil)

  • 2-3 cloves garlic, minced

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • 1/3 cup sliced almonds, toasted

  • juice of 1/2 a lemon

  • 1/4 parmesan cheese, finely grated

INSTRUCTIONS

  1. Preheat oven to 400 degrees and line baking sheet with aluminum foil. Spray with non-stick spray.

  2. Toss shaved sprouts with oil, salt, pepper and garlic.

  3. Spread sprouts evenly onto baking sheet.

  4. Bake for 20-25 minutes. Stir sprouts half way through baking.

  5. Transfer crispy sprouts to a bowl and toss with lemon juice, almond and parmesan.

Can be served warm or room temperature. Serves 3-4 or 2 if you are like me and can eat the whole bowl.
