Crispy Yam Fries

INGREDIENTS

  • 1 lb yams or sweet potatoes

  • 2 Tbsp vegetable oil

  • 2 Tbsp corn starch

  • 1/2 tsp garlic powder

  • 1 tsp paprika or cayenne pepper

  • 1 /2 tsp black pepper

  • iodized salt

INSTRUCTIONS

  1.  Preheat oven and baking sheet to 425 degrees

  2. Peel and cut the yams into 1/4 inch wide sticks and soak in cold water for at least 30 minutes.

  3. Drain and pat dry with a clean towel.

  4. Toss potatoes in canola oil.

  5. In a small bowl combine cornstarch, garlic, paprika and pepper.

  6. Sprinkle cornstarch mixture over potatoes and toss until cornstarch is dissolved in the oil. Add oil if necessary.

  7. Line 2 baking sheets with parchment paper.

  8. Spread potatoes out on baking sheets leaving some space between each fry. Don’t over lap!

  9. Bake for 15 minutes, rotating baking sheets half way through cooking.

  10. Remove fries from oven and individually flip with a spatula.

  11. Bake for another 10-15 minutes, rotating baking sheets halfway through cooking.

  12. Remove fries from oven and immediately sprinkle with salt.

  13. Let rest for a few minutes before serving.
