Clam Spaghetti

INGREDIENTS

  • 1/4 cup olive oil

  • 1 sweet onion diced

  • 1 tsp crushed red pepper flakes

  • 3-6.5 oz cans of minced clams (strained with liquid reserved)

  • 3 Tbsp Italian herb blend

  • 4 cloves minced or grated garlic

  • 1 cup minced Italian parsley

  • 1/2 cup grated Parmesan

  • 1 lb angel hair pasta (yes yes I know the recipe says spaghetti)

  • ground pepper to taste

INSTRUCTIONS

  1. In a large skillet on medium-low heat, sauteé diced onions, garlic and crushed red pepper flakes until onions are very soft. About 15 minutes.

  2. Add Italian herbs and sauteé for another 2 minutes. 

  3. Add clam liquid and simmer for 10 minutes or until liquid reduces by half.

  4. While liquid simmers, bring a large pot of very salty water to a boil. Cook angel hair pasta to the instructions on the box. Watch out! the pasta will cook very fast. 

  5. Strain pasta, but do not rinse.

  6. Add clams, Parmesan and parsley to the clam sauce. Stir to combine.

  7. Add angel hair pasta and continue to toss until all liquid is absorbed. 

  8. Remove from heat and serve. 

This meal gives you a lot of bang for your buck!  Great for dinner parties on a budget.        Feeds 6-8 people.
