Penne with Pistachio Cream Sauce
INGREDIENTS
1 lb Penne pasta
2 Tbsp olive oil
1 yellow onion minced
1 cup heavy cream
1 cup ground pistachios (or finely chopped if you don't have a food processor)
1 Tbsp lemon zest
1 tsp red pepper flakes
1/2 tsp salt
1/4 tsp pepper
1/3 cup Parmesan cheese
INSTRUCTIONS
In a deep sauteé pan with olive oil, cook onions until soft, but not browned. About 10 minutes.
Stir in ground pistachios, lemon zest and red pepper flakes. Cook for another 2 minutes.
Remove from heat and add heavy cream, salt and pepper. Set aside and cover.
Bring a large pot of salted water to a boil and cook pasta per the instructions on the box. Strain but do not rinse.
Add warm pasta to the pistachio sauce. Stir in Parmesan cheese.
