Penne with Pistachio Cream Sauce

INGREDIENTS

  • 1 lb Penne pasta

  • 2 Tbsp olive oil

  • 1 yellow onion minced

  • 1 cup heavy cream

  • 1 cup ground pistachios (or finely chopped if you don't have a food processor)

  • 1 Tbsp lemon zest

  • 1 tsp red pepper flakes

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • 1/3 cup Parmesan cheese

INSTRUCTIONS

  1.  In a deep sauteé pan with olive oil, cook onions until soft, but not browned. About 10 minutes.

  2. Stir in ground pistachios, lemon zest and red pepper flakes. Cook for another 2 minutes. 

  3. Remove from heat and add heavy cream, salt and pepper. Set aside and cover. 

  4. Bring a large pot of salted water to a boil and cook pasta per the instructions on the box. Strain but do not rinse. 

  5. Add warm pasta to the pistachio sauce. Stir in Parmesan cheese.
