Yakisoba with Mushrooms & Onions

INGREDIENTS

  • 18 oz of fresh yakisoba noodles (I prefer Fortune brand)

  • 1 large onion sliced

  • 8 oz sliced mushrooms (shitake, white or crimini)

  • 2 Tbsp vegetable oil

  • 1 small clove of garlic minced or grated

  • 1/4 cup soy sauce

  • 1 Tbsp rice vinegar

  • 2 Tbsp brown sugar

  • 1 tsp sesame oil

  • 1 tsp sriracha

  • 1 tsp crushed red pepper flakes (more if you like it spicy like my me)

  • 1 Tbsp toasted sesame seeds with extra to garnish

INSTRUCTIONS

  1.  Loosen noodles according to package. This usually involves running them under hot water for a few minutes or puncturing the package and microwaving them for a minute.

  2. While you are waiting for the noodles to soften make the sauce. Combine soy sauce, garlic, brown sugar, rice vinegar, sesame oil, crushed red pepper flakes and sriracha. Whisk together.

  3. In a deep sauteé pan or wok, sauteé mushrooms and onions on high heat in vegetable oil until dark brown and caramelized. About 10 minutes. 

  4. Add yakisoba noodles and sauce. Stir until the sauce is evenly distributed. 

  5. Let sit for 30 seconds undisturbed and stir. This will give you a few dark crispy noodles. Repeat as many times as you would like. Be careful not to let the noodles burn. 

  6. Remove from heat and stir in sesame seeds.

Serves 2-4 people.
