Chorizo Tacos with Pineapple Jalapeno Salsa

INGREDIENTS

  • 12 oz chorizo (also delicious with vegan chorizo)

  • 1 avocado

  • 6 taco sized corn tortilla

  • 1 1/2 cups pineapple diced

  • 1 jalapeno minced

  • 2 Tbsp cilantro chopped

  • 2 green onions diced

  • 1 Tbsp lime juice

  • 1/4 tsp salt

  • 1/8 tsp pepper

  • 1/4 tsp chili powder or chipotle powder

INSTRUCTIONS

  1.  Combine pineapple, jalapeno, cilantro, lime juice, green onions, salt, pepper and chili powder in a bowl. Let sit for at least 30 minutes to blend flavors.

  2. Remove chorizo from casing. In a large skillet, brown chorizo until crumbly and caramelized. About 10 minutes.

  3. Mash up avocado in a bowl with a fork. Spread avocado on warmed tortillas.

  4. Place 1/6 of chorizo on each tortilla and top with pineapple salsa. 

So easy so good.
