Chorizo Tacos with Pineapple Jalapeno Salsa
INGREDIENTS
12 oz chorizo (also delicious with vegan chorizo)
1 avocado
6 taco sized corn tortilla
1 1/2 cups pineapple diced
1 jalapeno minced
2 Tbsp cilantro chopped
2 green onions diced
1 Tbsp lime juice
1/4 tsp salt
1/8 tsp pepper
1/4 tsp chili powder or chipotle powder
INSTRUCTIONS
Combine pineapple, jalapeno, cilantro, lime juice, green onions, salt, pepper and chili powder in a bowl. Let sit for at least 30 minutes to blend flavors.
Remove chorizo from casing. In a large skillet, brown chorizo until crumbly and caramelized. About 10 minutes.
Mash up avocado in a bowl with a fork. Spread avocado on warmed tortillas.
Place 1/6 of chorizo on each tortilla and top with pineapple salsa.
So easy so good.
