Sweet Potato Tacos

  

INGREDIENTS

  • 2 sweet potatoes or yams

  • 1/2 tsp chili powder

  • 3/4 tsp salt

  • 1/4 tsp pepper

  • 1 yellow onion thinly sliced

  • 1/2 avocado diced or sliced

  • 2 Tbsp chopped cilantro

  • 1 Tbsp lime juice (half a lime)

  • 2 Tbsp crumbled cotija cheese 

  • 4-6 corn tortillas

  • your favorite hot sauce

INSTRUCTIONS

  1.  Preheat oven to 450 degrees

  2. Dice sweet potatoes into 1/2 inch chunks. Try to keep the pieces similar in size.

  3. Toss diced sweet potatoes in 1 tbsp olive oil, salt, pepper and chili powder.

  4. Roast potatoes for 30-45 minutes until browned and fork tender, tossing every 10-15 minutes.

  5. While the potatoes roast, caramelize onions in a sauteé pan in 1 tbsp olive oil on medium heat. Stir every 2 minutes or so. Should take about 15-20 minutes. 

  6. Spread your favorite hot sauce in a thin layer on the tortillas.

  7. When potatoes are done roasting, spoon onto tortillas. Add onions, avocado, cilantro and cotija. Squeeze lime juice over the top of the tacos. 

Feeds 2-4 people. Pairs well with Mexican Corn Salad
