Sweet Potato Tacos
INGREDIENTS
2 sweet potatoes or yams
1/2 tsp chili powder
3/4 tsp salt
1/4 tsp pepper
1 yellow onion thinly sliced
1/2 avocado diced or sliced
2 Tbsp chopped cilantro
1 Tbsp lime juice (half a lime)
2 Tbsp crumbled cotija cheese
4-6 corn tortillas
your favorite hot sauce
INSTRUCTIONS
Preheat oven to 450 degrees
Dice sweet potatoes into 1/2 inch chunks. Try to keep the pieces similar in size.
Toss diced sweet potatoes in 1 tbsp olive oil, salt, pepper and chili powder.
Roast potatoes for 30-45 minutes until browned and fork tender, tossing every 10-15 minutes.
While the potatoes roast, caramelize onions in a sauteé pan in 1 tbsp olive oil on medium heat. Stir every 2 minutes or so. Should take about 15-20 minutes.
Spread your favorite hot sauce in a thin layer on the tortillas.
When potatoes are done roasting, spoon onto tortillas. Add onions, avocado, cilantro and cotija. Squeeze lime juice over the top of the tacos.
Feeds 2-4 people. Pairs well with Mexican Corn Salad
