Apple Streusel Loaf
CAKE INGREDIENTS
2 cups all purpose flour
1 tsp baking powder
1/2 tsp salt
1/2 cup salted butter, room temperature
3/4 cup granulated sugar
2 large eggs, room temperature
1/2 cup Greek yogurt or sour cream, room temperature
1/2 cup milk, room temperature
1 tsp pure vanilla extract
1 1/2 cups diced tart apples (granny smith, honey crisp or fuji)
STREUSEL INGREDIENTS
5 tbsp salted butter, room temperature
1/4 cup packed brown sugar
1/4 cup all-purpose flour
2 tsp ground cinnamon
1/2 cup toasted pecans, chopped
INSTRUCTIONS
Preheat oven to 350 degrees. Grease and line a 9 x 5 loaf pan with parchment paper.
In bowl, whisk together 2 cups of flour, baking powder, and salt.
In a different bowl, cream butter and sugar together with an electric mixer until fluffy.
Add eggs, yogurt and vanilla and mix until smooth.
Add milk and dry ingredients. Mix until combined.
Fold in diced apple.
In another bowl, make streusel topping.
Add flour, brown sugar, cinnamon and butter. Mix together with a fork or pastry cutter until small clumps form. Stir in pecans.
Pour half of the batter into loaf pan.
Sprinkle half of the streusel on top.
Layer on the rest of the batter and then finish with the rest of the streusel.
Bake for 60 minutes or until a tooth pick comes out clean.
Let cool for 10 minutes before transferring loaf to a cooling rack.
