Blueberry Muffin Bread

INGREDIENTS

  • 2 cups all purpose flour

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1/2 cup salted butter, room temperature

  • 1/2 cup granulated sugar

  • 1/4 cup brown sugar, packed

  • 2 large eggs, room temperature

  • 1/2 cup Greek yogurt or sour cream, room temperature

  • 1 tsp pure vanilla extract

  • 1/2 cup milk, room temperature

  • 1 1/2 cups fresh or frozen blueberries

 

INSTRUCTIONS

  1. Preheat oven to 350 degrees. Grease and line a 9 x 5 loaf pan with parchment paper.

  2. Toss blueberries in a Tbsp of flour.

  3. In bowl, whisk together 2 cups of flour, baking powder, and salt.

  4. In a different bowl, cream butter and sugar together with an electric mixer until fluffy.

  5. Add eggs, yogurt and vanilla and mix until smooth.

  6. Add milk and dry ingredients. Mix until combined.

  7. Fold in blueberries.

  8. Pour batter into loaf pan.

  9. Bake for 60 minutes or until a tooth pick comes out clean.

  10. Let cool for 10 minutes before transferring loaf to a cooling rack.
