Key Lime Pie
CRUST INGREDIENTS
1 1/2 cup graham cracker crumbs (I use store bought crumbs, but you can crush your own).
4 Tbsp melted butter
FILLING INGREDIENTS
3 egg yolks
zest of 1 lime
2/3 cup lime juice
14 oz can sweetened-condensed milk
INSTRUCTIONS
Preheat oven to 325 degrees
Combine graham cracker crumbs and melted butter
Press mixture into a pie pan. Use a measuring cup to get a nice flat bottom and pressed sides.
Bake crust until set and golden. About 10 minutes. Remove from oven to cool.
In a large mixing bowl, whisk together egg yolks and lime zest until think and creamy. About 3 minutes.
Whisk in condensed milk and lime juice until combined.
Pour mixture into graham crack crust.
Bake for 10 minutes or until set. If you shake the pan, the filling should wobble a bit, but remain firm.
Let cool and refrigerate over night or for at least 2 hours.
Serve with lots of whipped cream.
