CRUST INGREDIENTS

  • 3 cups sweetened shredded coconut

  • 4 Tbsp softened salted butter

FILLING INGREDIENTS

  • 1 1/4 cup heavy cream

  • 10 oz dark chocolate chips

  • 1 tsp almond extract

  • 1/4 cup toasted almonds chopped

 

INSTRUCTIONS

  1. Preheat oven to 350 degrees 

  2. In a large food processor combine softened butter and 1 cup of the coconut until a paste forms. About 45 seconds.

  3. Add paste to a bowl with the rest of the coconut and combine with your hands.

  4. Press into the bottom and up the sides of a pie pan. Use a greased cup to get a flat bottom.

  5. Bake for 15-20 minutes. Keep an eye on it! the edges of the crust can burn quickly. Remove from oven when edges are golden brown.

  6. Place on a wire rack and cool completely.

  7. Bring heavy cream and almond extract to a boil. Immediately pour over chocolate chips in a heat safe bowl. Let sit for a few minutes.

  8. Whisk cream and chocolate together until silky and shiny.

  9. Pour chocolate into the crust. Top with chopped toasted almonds.

  10. Cool to room temperature. Cover with plastic wrap and refrigerate for at least 1 hour before serving.

  11. Serve with whipped cream. You can also offer flaked sea salt on the side if your guests want to live dangerously.
