Spicy Sesame Soba

INGREDIENTS

  • 1 lb wheat soba noodles

  • 1/4 cup soy sauce

  • 1/4 cup toasted sesame oil

  • 2 Tbsp brown sugar

  • 2 Tbsp balsamic vinegar

  • 2 Tbsp hot chili oil (All chili oils are different. Taste yours before you add it and decide if you want to add more or less.)

  • 1/4 cup toasted sesame seeds

  • 2 Tbsp chives, minced

INSTRUCTIONS

  1.  In a large bowl, whisk together soy sauce, sesame oil, chili oil, balsamic and sugar.

  2. Cook soba noodles according to the package. Usually boiling for about 4 minutes.

  3. Once cooked, drain and rinse with cold water.

  4. Add noodles to sauce and toss.

  5. Add sesame seeds and chives and toss.

Great as a make ahead lunch! I like to serve these cold or room temperature.
