Cold Miso Noodles

INGREDIENTS
18 oz of fresh yakisoba noodles (I prefer Fortune brand)
1/4 cup mild white miso paste (also delicious if you substitute creamy peanut butter for miso)
juice of 1 lime
1 tsp sesame oil
2 tsp brown sugar
1 large clove of garlic, grated
1/8 tsp white pepper
1/8 cup grape seed oil
1 Tbsp water
2 green onions diced
1 red fresno chile minced
1 Tbsp toasted sesame seeds
INSTRUCTIONS
Loosen noodles according to package. This usually involves running them under hot water for a few minutes or puncturing the package and microwaving them for a minute.
While you are waiting for the noodles to soften make the sauce. In a bowl, whisk together miso paste, lime juice, sesame oil, brown sugar, white pepper and garlic until smooth.
Whisk in grape seed oil, stirring constantly.
Whisk in 1 Tbsp water.
Pour sauce over noodles
Toss and add fresno chile and green onions.
Garnish with toasted sesame seeds.
Best if refrigerated for 1 hour before serving. Toss again before serving as the sauce may sink to the bottom of the bowl.
Great as a make ahead lunch!
