Cold Miso Noodles

INGREDIENTS

  • 18 oz of fresh yakisoba noodles (I prefer Fortune brand)

  • 1/4 cup mild white miso paste (also delicious if you substitute creamy peanut butter for miso)

  • juice of 1 lime

  • 1 tsp sesame oil

  • 2 tsp brown sugar

  • 1 large clove of garlic, grated

  • 1/8 tsp white pepper

  • 1/8 cup grape seed oil

  • 1 Tbsp water

  • 2 green onions diced

  • 1 red fresno chile minced

  • 1 Tbsp toasted sesame seeds

INSTRUCTIONS

  1.  Loosen noodles according to package. This usually involves running them under hot water for a few minutes or puncturing the package and microwaving them for a minute.

  2. While you are waiting for the noodles to soften make the sauce. In a bowl, whisk together miso paste, lime juice, sesame oil, brown sugar, white pepper and garlic until smooth.

  3. Whisk in grape seed oil, stirring constantly.

  4. Whisk in 1 Tbsp water.

  5. Pour sauce over noodles

  6. Toss and add fresno chile and green onions.

  7. Garnish with toasted sesame seeds.

  8. Best if refrigerated for 1 hour before serving. Toss again before serving as the sauce may sink to the bottom of the bowl.

Great as a make ahead lunch!
