Coconut Almond French Toast

INGREDIENTS

  • 10 - 1 inch slices of french baguette (day old bread is best)

  • 4 large eggs

  • 1/4 cup heavy cream (substitute half & half or whole milk)

  • 1 tsp vanilla or almond extract (almond will give you a richer almond flavor)

  • 1/2 tsp cinnamon

  • 1/4 tsp kosher salt

  • 1 Tbsp granulated sugar

  • 1/4 cup, plus 1 Tbsp sweetened shredded coconut, divided

  • 1 Tbsp butter

  • 1/4 cup toasted almonds, chopped

  • 1/2 cup syrup

  • Tbsp powdered sugar

INSTRUCTIONS

  1. In a large bowl, whisk together eggs, cream, vanilla, cinnamon, salt, granulated sugar and 1/4 cup coconut.

  2. Add bread to mixture, turning slices to make sure they are evenly coated. Let bread soak for 30 minutes. Turn slices occasionally to ensure all slices are able to soak up egg mixture.

  3. In a large pan or griddle, heat 1 tbsp butter over medium heat until bubbling.

  4. In a single layer, fry slices of bread in butter for 3-4 minutes on each side until golden brown.

  5. Remove from pan and arrange on serving tray.

  6. Drizzle with syrup.

  7. Sprinkle with almonds and 1 tbsp coconut

  8. Dust with powdered sugar.
