Toasted Almond & Coconut Cookies
INGREDIENTS
1 cup salted butter, melted
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs
2 teaspoons almond extract
2 1/2 cups all purpose flour
1 tsp baking soda
1/2 teaspoon salt
1 cup chopped and toasted almonds
1 cup unsweetened flakes coconut
INSTRUCTIONS
Preheat oven to 375 degrees
Combine melted butter and sugar together in a large mixing bowl.
Add the eggs and almond extract. Make sure the mixture is cool enough that you won't make scrambled eggs. Stir until combined.
In a separate bowl combine flour, baking soda and salt.
Stir the dry ingredients into the wet ingredients until combined.
Add toasted almonds and coconut. Stir to combine.
Chill dough for 30 minutes in the refrigerator.
Using a large soup spoon, scoop out 2 Tbsp of dough and roll into balls. If you want them to be exactly the same size use an icecream scoop.
Place an inch apart on parchment lined baking sheets.
Bake for 10-12 minutes or until golden brown.
Makes 36 cookies. Also good with chocolate chips if you are craving an Almond Joy.
