Tzatziki Sauce

INGREDIENTS

  • 1/2 cucumber, peeled and roughly chopped

  • 2 cups full-fat Greek yogurt

  • 1 Tbsp olive oil

  • 1 Tbsp lemon juice

  • 4 cloves of garlic, grated or minced (this is a really garlicky sauce. You can use less if you prefer)

  • 1 tsp kosher salt

  • 1/4 tsp ground white pepper

  • 1 Tbsp fresh dill, chopped

INSTRUCTIONS

  1. In a large food processor, mince cucumber.

  2. Using a kitchen cloth ring the liquid out of the cucumber.

  3. In a bowl combine all ingredients. Refrigerate until serving.

Great on kefta and lamb burgers or served as a dip with pita.
