Messy Mushroom Sandwich

INGREDIENTS

  • 1 large onion, sliced

  • 4 cloves garlic, minced

  • 3 portabella mushroom, gills scraped out and cut into strips

  • 1 cup vegetable stock

  • 1 Tbsp soy sauce

  • 1 Tbsp Worcestershire sauce (or vegan Worcestershire sauce if you want to keep this 100% vegetarian)

  • 1/2 tsp dried thyme

  • cracked black pepper to taste

  • 2-4 Kaiser or Hoagie Rolls

  • smoked provolone cheese, sliced

INSTRUCTIONS

  1.  In a large skillet on medium-low heat, caramelize onions in a couple tablespoons of oil. This should take about 20 minutes.

  2. Add garlic and saute for another 2 minutes.

  3. Remove onions from pan and add a couple more tablespoons of oil.

  4. Bring the pan up to medium heat and add mushrooms. Saute until mushrooms start to brown. About 10 minutes.

  5. Add onions and garlic back to the pan.

  6. Add vegetable stock, Worcestershire sauce, soy sauce, pepper and thyme.

  7. Bring to a simmer and reduce liquid by half. Remove from heat.

  8. Remove from heat and toast your buns in the oven at 350 degrees for 4-5 minutes. When the buns are done, turn off the oven’s heat. Place provolone on both sides of the buns and let the residual heat in the oven melt the cheese.

  9. Using tongs, transfer mushrooms and onions to the buns.

  10. Grab a napkin. It’s gunna get messy.

*This recipe makes 2-4 sandwiches depending on the size of yo buns!
