Harissa Honey Carrots

INGREDIENTS

  • 2 1/2 lbs carrots, peeled and cut on the bias

  • 3 Tbsp olive oil

  • 1 Tbsp balsamic vinegar

  • 1 Tbsp apple cider vinegar

  • 2 Tbsp honey

  • 2 tsp harissa seasoning (or 1 Tbsp harissa paste)

  • 1/4 tsp of cayenne pepper

  • 1 tsp kosher salt

  • 1/2 tsp pepper

  • 2 Tbsp fresh parsley, finely chopped

INSTRUCTIONS

  1. Preheat oven to 450 degrees and line baking sheet with aluminum foil. Spray with non-stick spray.

  2. Whisk together oil, vinegar, garlic, honey and spices.

  3. Toss carrots in seasoning mixture.

  4. Spread carrots out onto baking sheet.

  5. Roast until fork tender. About 15-20 minutes.

  6. Garnish with parsley
