Harissa Honey Carrots
INGREDIENTS
2 1/2 lbs carrots, peeled and cut on the bias
3 Tbsp olive oil
1 Tbsp balsamic vinegar
1 Tbsp apple cider vinegar
2 Tbsp honey
2 tsp harissa seasoning (or 1 Tbsp harissa paste)
1/4 tsp of cayenne pepper
1 tsp kosher salt
1/2 tsp pepper
2 Tbsp fresh parsley, finely chopped
INSTRUCTIONS
Preheat oven to 450 degrees and line baking sheet with aluminum foil. Spray with non-stick spray.
Whisk together oil, vinegar, garlic, honey and spices.
Toss carrots in seasoning mixture.
Spread carrots out onto baking sheet.
Roast until fork tender. About 15-20 minutes.
Garnish with parsley
