Crispy Onion Straws

INGREDIENTS

  • 1 large onion

  • 2 cups buttermilk

  • 2 cups of flour

  • 1 1/2 Tbsp salt

  • lots of ground black pepper (you should be able to see it in the flour mixture)

  • 2 tsp cayenne pepper

INSTRUCTIONS

  1.  Peel and slice the onion as thin as possible. Use a mandolin if you own one. 

  2. Place onions in a bowl and cover with buttermilk. Let onions soak for at least an hour. 

  3. Combine flour, salt, pepper and cayenne in a large shallow bowl.

  4. Heat canola oil on medium heat or to 375 degrees. The oil is ready when you drop in an onion and its sizzles and bounces around in bubbles. 

  5. Using tongs, remove onions from the buttermilk and let the excess milk run off. Toss the onions in flour mixture. 

  6. In batches, take out some onions, shake off excess flour mixture and drop in the hot oil. Quickly stir the onions around after you drop them in to separate them.

  7. Fry for 2-3 minutes and remove with a slotted spoon or spider and place on a paper towel lined plate. 

Great with burgers, sandwiches, chili, green beans and BBQ.
