Salty Sweet Peanut Butter Bars
INGREDIENTS
1 stick salted butter
1 cup peanut butter (I like crunchy)
1/2 cup granulated sugar
1/2 cup brown sugar, packed
3 eggs
2 tsp vanilla extract
1 cup almond flour and 1/2 cup coconut flour
3/4 tsp baking powder
optional flakey sea salt to sprinkle on top
INSTRUCTIONS
Preheat oven to 350 degrees and lightly grease an 8x8 inch baking pan with butter or nonstick cooking spray. Line with parchment paper for easy removal from pan.
Melt butter in a small sauce pan on medium until milk solids start to brown and butter smells nutty. About 5-10 minutes. Butter should be the color of a paper bag with a layer of frothy bubbles on top. Keep an eye on it!
Pour butter into mixing bowl.
Whisk in peanut butter, vanilla and sugars.
Whisk in egg. Make sure the mixture is cool enough that you won't make scrambled eggs.
In a separate bowl combine flour and baking powder.
Add dry ingredients to wet ingredients and stir until combined. Do not over mix!
Pour batter into pan and spread to the edges with a spatula.
Sprinkle flakey sea salt onto the top if you like.
Bake for 20 minutes. A tooth pick should come out with a few moist crumbs.
Let the bars cool 15 minutes before removing from pan. Lift out of pan by the parchment paper and let cool on cooling rack.
Let cool for another 15-30 minutes before slicing.
