Churro Bars
INGREDIENTS
1 cup salted butter, melted
1 tsp kosher salt
2 cups packed brown sugar
1 Tbsp vanilla extract (Mexican vanilla if you have it)
2 eggs
2 tsp baking powder
2 1/2 cups flour
2 Tbsp granulated sugar
2 tsp ground cinnamon
INSTRUCTIONS
Preheat oven to 350 degrees
Lightly grease a 9 x 13 baking pan. Line with parchment paper.
Combine melted butter and brown sugar together in a medium-sized bowl. Whisk well.
Whisk in the eggs and vanilla.
Add flour, baking powder and salt. Fold the dry ingredients into the wet ingredients until combined. Do not over mix!
Pour batter into prepared pan, smoothing the top out evenly.
Combine granulated sugar and cinnamon in a small bowl. Sprinkle evenly over the batter.
Bake for 25 minutes, or until the center of the brownies in the pan no longer jiggles and is just set to the touch. If testing with a toothpick, the toothpick should come out clean.
Remove and allow to cool slightly before slicing into 16 brownies.
These are delicious served warm with a scoop of vanilla ice cream!
