French Onion Soup
INGREDIENTS
2 Tbsp olive oil
3 Tbsp butter
4 cups sliced yellow onions (about 2 large onions)
2 Tbsp dry sherry
1 Tbsp soy sauce
1 Tbsp chopped fresh thyme
32 oz beef broth
salt and pepper to taste
4 cups cubed sourdough bread
1/2 cup shredded Gruyere
1/2 cup shredded Parmesan
ground nutmeg
INSTRUCTIONS
In a large soup pot or dutch oven, sauteé onions in olive oil and butter on medium heat until soft and translucent. About 15 minutes.
Add sherry, soy sauce and thyme.
Add beef broth.
Simmer for 45 minutes. Add salt and pepper when soup is done simmering. If you salt before the soup is done it may turn out too salty.
Turn on broiler to 500 degrees.
Ladle soup into bowls. Top with enough cubed bread to cover the top of the soup. Sprinkle cheese over the bread cubes.
Broil for about 5 minutes until cheese melts and bubbles.
Let cool for 5 minutes before eating. Garnish with nutmeg and thyme.
Serves 4 as a main course or 8 as a starter or side.
