Spicy Tomato Confit

INGREDIENTS

  • 10 roma tomatoes cut in half lengthwise

  • 1/4 cup olive oil

  • 2 cloves garlic, minced

  • 1 Tbsp fresh thyme, chopped

  • 1 tsp sugar

  • 1 tsp crushed red pepper flakes

  • salt and pepper to taste

INSTRUCTIONS

  1.  Preheat oven to 300 degrees

  2. Toss tomatoes in olive oil, garlic, thyme, sugar, and red pepper flakes. Sprinkle with salt and pepper.

  3. Place wire rack on a foil lined baking sheet. Arrange tomatoes, skin side down, on the wire rack.

  4. Roast tomatoes for 2 hours.

  5. Remove from oven and let cool.

  6. Dice tomatoes and transfer to a pretty bowl.

  7. Stir in salt and pepper to taste.

  8. Garnish with Parmesan cheese (optional).

Best served like a dip with crostini or crocanntini. There is a lot of moisture in the tomatoes. Do not pre-spread on crostinis or they will become soggy.
