Bruschetta

INGREDIENTS

  • 6 roma tomatoes diced

  • 3 cloves of garlic minced

  • 12 basil leaves in ribbons

  • 3 Tbsp of GOOD olive oil (nod to Ina)

  • 1 Tbsp balsamic vinegar

  • 3/4 tsp of salt

  • 1/4 tsp pepper

  • 1 baguette (I prefer Italian bread). 

  • Optional Garnish: 3 Tbsp Parmesan cheese

INSTRUCTIONS

  1.  Slice baguette (Come on! You should have bought pre-sliced) into 1/4 inch slices and toast until crisp.

  2. Combine tomatoes, garlic, basil, olive oil, balsamic, salt and pepper in a bowl and refrigerate for 1 hour. 

  3. Spoon onto toasted baguettes. Garnish with Parmesan if you so choose. 

Makes 9-12 toasts depending on size
