Bruschetta
INGREDIENTS
6 roma tomatoes diced
3 cloves of garlic minced
12 basil leaves in ribbons
3 Tbsp of GOOD olive oil (nod to Ina)
1 Tbsp balsamic vinegar
3/4 tsp of salt
1/4 tsp pepper
1 baguette (I prefer Italian bread).
Optional Garnish: 3 Tbsp Parmesan cheese
INSTRUCTIONS
Slice baguette (Come on! You should have bought pre-sliced) into 1/4 inch slices and toast until crisp.
Combine tomatoes, garlic, basil, olive oil, balsamic, salt and pepper in a bowl and refrigerate for 1 hour.
Spoon onto toasted baguettes. Garnish with Parmesan if you so choose.
Makes 9-12 toasts depending on size
