Smoky Sweet Enchilada Sauce

INGREDIENTS

  • 2 Tbsp olive oil

  • 2 Tbsp all-purpose flour

  • 4 Tbsp mild chili powder

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/4 tsp cumin

  • 1 tsp died oregano

  • 1/4 - 1 tsp cayenne (depends how spicy you want it)

  • 1 Tbsp apple cider vinegar

  • 2 Tbsp granulated sugar

  • 2 1/4 cup chicken stock

  • 1 Tbsp butter

INSTRUCTIONS

  1.  In a bowl combine spices.

  2. Heat olive oil in a deep pan over medium heat. When oil is hot, add flour and cook for a minute.

  3. Pour in spices and cook for a minute.

  4. Add chicken stock and bring to a simmer.

  5. Stir in apple cider vinegar and sugar. Cook another minute.

  6. Take sauce off heat and stir in butter.

This makes enough sauce for a 9 x 13 pan of enchiladas.
