Smoky Sweet Enchilada Sauce
INGREDIENTS
2 Tbsp olive oil
2 Tbsp all-purpose flour
4 Tbsp mild chili powder
1 tsp garlic powder
1 tsp onion powder
1/4 tsp cumin
1 tsp died oregano
1/4 - 1 tsp cayenne (depends how spicy you want it)
1 Tbsp apple cider vinegar
2 Tbsp granulated sugar
2 1/4 cup chicken stock
1 Tbsp butter
INSTRUCTIONS
In a bowl combine spices.
Heat olive oil in a deep pan over medium heat. When oil is hot, add flour and cook for a minute.
Pour in spices and cook for a minute.
Add chicken stock and bring to a simmer.
Stir in apple cider vinegar and sugar. Cook another minute.
Take sauce off heat and stir in butter.
This makes enough sauce for a 9 x 13 pan of enchiladas.
