Sesame Slaw

INGREDIENTS

  • 14 oz package of coleslaw mix or shredded cabbage

  • 1 red bell pepper, diced

  • 2 green onions, diced

  • 1/2 cup fresh cilantro, chopped

  • 1 clove garlic, minced

  • 1/4 cup rice vinegar

  • 2 Tbsp canola oil

  • 1 Tbsp soy sauce

  • 2 Tbsp honey

  • 1 tsp sesame oil

  • 1/2 tsp crushed red pepper flakes

  • 2 Tbsp toasted sesame seeds

INSTRUCTIONS

  1. In a large bowl, toss coleslaw mix, red peppers, green onions and cilantro.

  2. In a small bowl, whisk together vinegar, soy sauce, honey, canola oil, garlic, red pepper flakes and sesame oil.

  3. Pour dressing over the coleslaw mix and toss.

  4. Add toasted sesame seeds and toss.

This makes a great make-ahead lunch with some grilled chicken or fried tofu on top!
