Summer Squash Salad

INGREDIENTS

  • 2 large summer squashes or 3 small (zucchini, yellow squash, etc)

  • 2 Tbsp olive oil

  • juice from 1/2 a lemon

  • 1/2 tsp salt

  • 1/4 cracked black pepper

  • 1/4 cup toasted pine nuts

  • 1 Tbsp chopped basil

  • 2 Tbsp grated Parmesan

INSTRUCTIONS

  1. Using a mandolin on the thinnest setting, slice summer squash lengthwise.

  2. In a small bowl whisk together olive oil, lemon juice, salt and pepper.

  3. Move squash to a large bowl and toss with olive oil and lemon vinaigrette

  4. Add Parmesan, basil and pine nuts and toss.

Feeds 3-4 people as a side dish.
