Summer Squash Salad
INGREDIENTS
2 large summer squashes or 3 small (zucchini, yellow squash, etc)
2 Tbsp olive oil
juice from 1/2 a lemon
1/2 tsp salt
1/4 cracked black pepper
1/4 cup toasted pine nuts
1 Tbsp chopped basil
2 Tbsp grated Parmesan
INSTRUCTIONS
Using a mandolin on the thinnest setting, slice summer squash lengthwise.
In a small bowl whisk together olive oil, lemon juice, salt and pepper.
Move squash to a large bowl and toss with olive oil and lemon vinaigrette
Add Parmesan, basil and pine nuts and toss.
Feeds 3-4 people as a side dish.
