Thai Green Papaya Salad
INGREDIENTS
5 Tbsp lime juice
3 Tbsp brown sugar
2 Tbsp fish sauce
2 Tbsp dried shrimp, chopped (you can find this at most Asian markets)
4 cloves of garlic, minced
Large green papaya, julienned on the thinnest setting on a mandolin, or grated on the largest setting of a box grater (you can find green papaya at most Asian markets)
1 cup fresh cilantro chopped
2 green onions diced
3 fresh red Thai chilis (this is a spicy dish! use one if you want to keep it mild)
1/4 salted dry roasted peanuts, chopped
INSTRUCTIONS
Whisk together lime juice, brown sugar, fish sauce, garlic, and dried shrimp.
Pour over green papaya
Toss papaya with sauce, cilantro, green onions, thai chilis and peanuts.
This gets better the longer it sits. It is great to make ahead for lunches.
