Bacon Fried Rice
INGREDIENTS
3/4 cup diced bacon, pancetta, or guanciale
3/4 cup chopped onion, (about 1/2 a medium onion)
1/2 cup snap peas, diced
1 clove of garlic, minced
3 eggs, lightly scrambled
1/2 - 1 tsp crushed red pepper flakes
3 cups cooked rice (leftover rice is great for this recipe!)
2 Tbsp soy sauce
2 Tbsp oyster sauce
1 green onion, diced
INSTRUCTIONS
In a large sauteè pan or wok, cook pork over medium high heat until fat is rendered and meat is browned and crispy.
Remove pork from pan with a slotted spoon and set aside. Spoon out excess fat, leaving about 2 Tbsp.
Add onions and snap peas to the fat and cook for about 5 minutes and onions are translucent and slightly browned.
Add garlic and crushed red pepper flakes. Cook for another minute.
Push vegetables to the side of the pan and pour egg into the empty space. Cook for 30 seconds, scraping egg off bottom of pan.
Add rice, pork, soy sauce and oyster sauce. Stir until rice is coated with sauce.
Cook for another few minutes, stirring occasionally until rice starts to brown.
Plate and garnish with green onions.
