Fonda's Sushi Rice

INGREDIENTS

  • 2 cups sushi rice

  • 2 2/3 cups water

  • 4 Tbsp rice vinegar

  • 1 1/2 Tbsp granulated sugar

  • 2 tsp kosher salt

  • 1 Tbsp plus 1/2 tsp mirin

INSTRUCTIONS

  1. Rinse sushi rice in cold water 5 times. Pour out water from bowl between each rinse.

  2. Drain rice for 1 hour.

  3. While rice is draining, combine vinegar, sugar salt and mirin in a bowl and mix well.

  4. Pour 2 2/3 cup water into a pot. Add sushi rice and let sit 15 minutes.

  5. Bring water and sushi rice to a boil. Reduce to low and cover.

  6. Simmer for 20 minutes. DO NOT remove lid and let steam out.

  7. Move rice to a glass bowl and lightly stir in the vinegar mixture.

  8. Let cool to room temperature before using to make maki or nigiri.

Ryan has been trying to perfect this for years and has combined about 10 different recipes. He eats more sushi than anyone I know…. I have the receipts to prove it. So trust me this is the best recipe for sushi rice outside of Japan!
