Pumpkin Bread
INGREDIENTS
1 cup pureed pumpkin
1/2 cup vegetable oil
1 cup granulated sugar
2 eggs
3/4 tsp salt
2 tsp pumpkin pie seasoning (sold at most grocery stores)
1 tsp baking soda
1/2 tsp baking powder
1 1/2 cup all-purpose flour
1/2 cup chopped pecans (or walnuts)
INSTRUCTIONS
Preheat oven to 325 degrees and lightly grease an 8x4 inch loaf pan with butter or nonstick cooking spray.
In a large mixing bowl, combine pumpkin, oil, sugar and egg. Stir until combined
In a separate bowl combine salt, flour, pumpkin pie spice, baking powder and baking soda.
Add dry ingredients to wet ingredients and stir until combined. Do not over mix!
Fold in nuts.
Pour batter into loaf pan and spread to the edges with a spatula.
Bake for 60 minutes. A tooth pick should come out with a few moist crumbs.
Let the loaf cool 15 minutes before removing from pan. Turn loaf over onto wire rack to remove from pan. Flip over to be right side up to finish cooling.
This bread may be less sweet that you are used to. Add sugar to taste.
