Pork Larb
INGREDIENTS
1 lb ground pork
2 Tbsp vegetable oil
6 cloves garlic, minced
1 Tbsp and 1 tsp granulated sugar
1 tsp crushed red pepper flakes
2 Tbsp lime juice
3 Tbsp fish sauce
1 Tbsp water
1/2 red onion, thinly sliced
1/4 cup thai basil, chopped
1/4 cup fresh cilantro, chopped
1/4 cup fresh mint, chopped
1 serrano pepper, thinly sliced (optional)
INSTRUCTIONS
In a wok or large saute pan, heat vegetable oil over medium-low heat.
Saute garlic until slightly browned.
Stir in 1 tsp sugar and saute until dissolved.
Increase heat to medium-high. Add pork and cook just until all of the pink is gone.
Remove pork from heat and set aside. Stir in crushed red pepper flakes while the meat is still hot.
In a small bowl combine, lime juice, fish sauce, water and remaining Tbsp of sugar.
Stir red onion and fresh herbs into meat.
Pour sauce over the meat and stir.
Top with serrano peppers if you would like extra heat.
Serve with jasmine rice, sticky rice or coconut rice (my favorite).
This is a really fast and easy weeknight meal!
