White Wine and Herb Tortellini

INGREDIENTS

  • 2 Tbsp olive oil

  • 1 small sweet onion, diced

  • 4 cloves garlic, minced

  • 1/2 crushed red pepper flakes

  • 1 Tbsp Italian herb blend

  • 1/2 tsp kosher salt

  • 1/4 tsp cracked black pepper

  • 3/4 cup dry white wine (I use pinot grigio)

  • 1 Tbsp cold butter

  • 1/4 cup fresh Italian parsley, minced

  • 1/4 cup grated Parmesan

  • 1 lb tortellini (You can use 1 lb of any pasta you want. I like it best with cheese or sausage tortellini)

INSTRUCTIONS

  1. Bring a large pot of very salty water to a boil. Cook pasta according to the instructions on the box. I usually cook fresh tortellini no more than 4 minutes, even though it usually says 7 or so on the package.

  2. Strain pasta, but do not rinse.

  3. While water heats up to boil, sauteé diced onions, garlic and crushed red pepper flakes in a large skillet until onions are very soft. About 10 minutes.

  4. Add Italian herbs and sauteé for another 2 minutes. 

  5. Add white wine and simmer for 5 minutes or until liquid reduces by half. Remove from heat.

  6. Stir in cold butter.

  7. Add tortellini, Parmesan and parsley. Toss until combined. 

This meal gives you a lot of bang for your buck. It super fast and delicious.
