Spicy Pumpkin Penne

INGREDIENTS

  • 1 lb penne pasta

  • 2 Tbsp olive oil

  • 1 medium yellow onion, diced

  • 2 cloves garlic, minced

  • 1/2 tsp pumpkin pie spice

  • 1 cup pureed pumpkin

  • 3/4 cup water

  • 1/4 cup heavy cream

  • 1 tsp cayenne pepper (this depends on the freshness of your cayenne or how spicy you want the pasta. Start with a 1/2 tsp and add more as needed)

  • 1/4 cup grated Parmesan cheese with extra for garnish

  • salt and pepper to taste

  • fresh parsley, chopped (optional)

INSTRUCTIONS

  1. In a deep sauteé pan, sauteé onions and and garlic on medium heat until soft and fragrant. About 15 minutes

  2. Add pumpkin pie spice and cayenne and cook for another minute. 

  3. Add pumpkin, heavy cream, water, parmesan, salt and pepper. Cook for 2 minutes. Add more water if the sauce is too thick.

  4. Turn off heat and cover sauce. 

  5. Cook penne according to packaging.

  6. Drain pasta. Do not rinse. 

  7. Add pasta to sauce and stir.

  8. Plate pasta and garnish with Parmesan and parsley.
