Orzo with Egg, Parmesan & Pepper
INGREDIENTS
1 lb orzo
3 large eggs
1 Tbsp butter
2 cloves of garlic, minced
1/2 cup grated Parmesan
1 tsp salt
1/2 tsp ground pepper
1 tsp red pepper flakes
INSTRUCTIONS
In a large pot bring salted water to a rolling boil.
In a large skillet on medium-low heat, sauteé garlic in butter. Keep heat low to prevent garlic from browning.
Cook orzo according to instructions on the package.
Whisk together eggs.
Drain orzo and pour into pan with garlic and butter. Stir and take off of the heat.
Add eggs and Parmesan. Stir quickly.
Add salt, pepper and red pepper flakes.
This is one of my favorite side dishes! It only takes 15 minutes and it’s so comforting.
The orzo is also delicious left over. Press leftovers into a baking dish and chill in the refrigerator. Cut into squares and eat for lunch at room temperature.
