Cold Thai Ramen

INGREDIENTS

  • 18 oz of fresh yakisoba noodles (I prefer Fortune brand)

  • 1 small shallot diced 

  • 1 small clove of garlic minced or grated

  • 1 Tbsp lime juice

  • 1 Tbsp rice vinegar

  • 2 Tbsp fish sauce

  • 2 Tbsp brown sugar

  • 1 tsp sesame oil

  • 1 tsp sriracha (more if you like it spicy like my me)

  • 2 diced scallions with some set aside for garnish

  • 1/4 dry salted dry roasted peanuts with some set aside for garnish

INSTRUCTIONS

  1.  Loosen noodles according to package. This usually involves running them under hot water for a few minutes or puncturing the package and microwaving them for a minute.

  2. While you are waiting for the noodles to soften make the sauce. Combine shallot, garlic, lime juice, brown sugar, rice vinegar, sesame oil, sriracha, and fish sauce. Whisk together.

  3. Pour sauce over noodles and toss. Add peanuts and scallions with some set aside for garnishing. 

  4. Best if refrigerated for 1 hour before serving. Toss again before serving as the sauce may sink to the bottom of the bowl. 

Serves 4-6 people.
