White Chocolate Macadamia Cookies

INGREDIENTS

  • 1 cup salted butter, at room temperature

  • 3/4 cup granulated sugar

  • 3/4 cup packed brown sugar

  • 2 large eggs

  • 2 teaspoons pure vanilla extract

  • 2 1/4 cups all purpose flour

  • 1 tsp baking soda

  • 1/2 teaspoon salt

  • 1 cup white chocolate chips

  • 1 1/2 cups chopped macadamia nuts

  • flaked sea salt, optional

 

INSTRUCTIONS

  1. Preheat oven to 350 degrees

  2. Using a mixer, cream butter and sugar together in a large mixing bowl until fluffy. 

  3. Add the eggs and vanilla and mix until combined.

  4. In a separate bowl combine flour, baking soda and salt.

  5. Add the dry ingredients into the wet ingredients and mix until combined. 

  6. Add white chocolate chips and macadamia nuts. Stir to combine.

  7. Chill dough for 30 minutes in the refrigerator.

  8. Using a large soup spoon, scoop out 2 Tbsp of dough and roll into balls. If you want them to be exactly the same size use an ice cream scoop. 

  9. Place an inch apart on parchment lined baking sheets.

  10. Bake for 10-12 minutes or until golden brown.

  11. Sprinkle with flaked sea salt while cookies are still warm. 

Makes 36 cookies.
