Madison's Russian Tea Cakes

INGREDIENTS

  • 1 cup butter, room temperature

  • 1/2 cup powdered sugar

  • 1 tsp vanilla extract

  • 2 1/4 cup all-purpose flour

  • 3/4 cup roasted ground nuts (walnuts or pecans)

  • 1/2 tsp salt

  • Extra powdered sugar for rolling the cookies in (at least 1 cup) 

INSTRUCTIONS

  1. Preheat oven to 400 degrees

  2. Using a hand or standing mixer, cream butter, powdered sugar and vanilla together for at least 1 minute or until smooth and fluffy.

  3. Add flour, nuts and salt. Mix until just combined. Do not over mix or the cookies will be tough!

  4. Roll dough into 1 inch balls and place apart on a parchment lined baking sheet. Cookies only spread a little bit.

  5. Bake for 10-12 minutes until set but not brown.

  6. Let cookies sit on the try for a few minutes to cool.

  7. While the cookies are warm, not hot, roll them in the extra powdered sugar.

  8. When cookies are completely cool, roll them in the powdered sugar again.

    Makes 24 cookies.
