Peanut Butter Chocolate Cookies

INGREDIENTS

  • 1/2 cup salted butter, melted

  • 1/2 cup granulated sugar

  • 1/2 cup brown sugar

  • 1 cup peanut butter

  • 1/2 tsp vanilla

  • 1 egg

  • 1/2 tsp baking soda

  • 1 1/2 cups flour

  • 12 oz bag of semi-sweet chocolate chips

 

INSTRUCTIONS

  1. In a bowl, whisk together flour and baking soda.

  2. In another bowl, whisk together melted butter, granulated sugar, brown sugar, vanilla, peanut butter and egg. Whisk until smooth.

  3. Stir in flour and baking soda until combined.

  4. Refrigerate dough for at least 30 minutes.

  5. Preheat oven to 375 degrees and line baking sheets with parchment paper.

  6. Roll dough into balls and place on parchment paper. Leave 1 inch between cookies.

  7. Using a fork, press down on the ball until flat. Turn the fork and lightly press again to create a cross hatch pattern. (You can use anything with a fun pattern to flatten the dough. My mom uses a meat tenderizer)

  8. Bake for 11-13 minutes or until the edges begin to brown.

  9. Transfer to wire racks and let cool completely.

  10. Melt chocolate chips in the microwave (30 seconds at a time) or in a double boiler.

  11. Spoon 1-2 tsp of melted chocolate in dollops onto foil or parchment paper.

  12. Press cookie down onto chocolate dollops until chocolate spreads to the edges of the cookie.

  13. Let chocolate harden (about 2 hours) before peeling off of foil or parchment.

Makes about 24 cookies depending on the size of dough ball.
