Peppermint Chocolate Sandwich Cookies
INGREDIENTS
1/2 cup salted butter at room temperature
1 cup granulated sugar
1 egg at room temperature
1 tsp vanilla extract
1/4 tsp salt
1 1/4 cups all-purpose flour
1 1/2 tsp baking powder
Couple drops of red food coloring (I like the gel food coloring).
1/4 - 1/2 tsp peppermint extract
1 cup white chocolate chips
1 cup dark chocolate chips
INSTRUCTIONS
Combine butter and sugar in a large bowl with a hand mixer.
Mix in egg and vanilla.
Mix in flour, salt and baking powder.
Once mixed, remove half of the dough from the bowl. Add a few drops of red food coloring to the dough left in the bowl and mix until the dough is a bright pink color.
Form the plain and pink dough into disks and wrap in saran wrap. Chill for 30 minutes.
Roll both disks into oblong ovals as close to the same size and shape as possible, 1/8 of an inch thick.
Stack the ovals and roll into a log like a jelly roll. Roll from the long side of the oval.
Roll logs in parchment paper. Twist ends tightly to compact the logs.
Refrigerate dough for at least 4 hours.
Preheat oven to 400 degrees and line baking sheets with parchment paper.
Cut the sloped ends off of logs and discard. Slice the log into 1/8 inch thick disks.
Place disks 1/2 inch apart on the baking sheets.
Bake for 8-10 minutes, until the edges are slightly brown. Keep an eye on these beauties as they burn quickly.
Transfer to wire rack to cool.
While cookies cool, heat white chocolate chips and peppermint extract in the microwave (30 seconds at a time) or double boiler. Add a little peppermint at a time until you get the flavor you want.
Spoon 1 tsp of white chocolate onto the underside of 1/2 the cookies.
Spread white chocolate to the edges with a butter knife.
Melt dark chocolate chips using a double boiler or microwave (30 seconds at a time). Spoon 1 tsp of chocolate onto other half of the cookies.
Press white chocolate covered cookies onto dark chocolate cookies to make a sandwich. Press down lightly so that the filling doesn’t ooze out the sides.
Let cookies sit for at least one hour to set up.
Makes about 20 sandwiches. Also these are just as delicious without adding the pink swirl, but sometimes you need to dress to impress.
