Roasted Red Pepper and Sundried Tomato Sandwich Spread

INGREDIENTS

  • 8oz jar of roasted red peppers, ok if not exact

  • 8oz jar of sundried tomatoes in oil, ok if not exact

  • 1 yellow onion thinly sliced

  • 1 head of garlic

  • 1 sprig fresh rosemary

  • 10 leaves fresh basil

  • 2 Tbsp balsamic vinegar

  • 1 Tbsp brown sugar

INSTRUCTIONS

  1. preheat oven or toaster oven to 400 degrees.

  2. Remove outer layer of garlic skin. Cut top 3rd of garlic off to expose cloves. Drizzle with olive oil, wrap in foil and roast for 30-45 minutes until golden brown.

  3. In a pan on medium heat, caramelize onions in 1 Tbsp olive oil. Add water 1 tbsp at a time if onions brown too fast. About 15 minutes.

  4. In a small food processor combine all ingredients. Blend until smooth.
