Smoky Citrus Chicken Bowls
INGREDIENTS
1 lb chicken breast tenders, sliced into strips or cut into chunks
1/4 cup bbq sauce, preferably a smoky kind
juice of 1/2 an orange
juice of 1/2 lime
zest of 1 lime
1 tsp cumin
1 tsp chili powder
1 tsp smoked paprika
1/4 tsp cayenne pepper
tsp kosher salt
2 large poblano peppers, sliced (substitute green pepper)
1 large red onion, sliced
1 cup rice
1 Tbsp butter
2 tsp taco or fajita seasoning
1/4 cup chopped cilantro for garnish
1/3 cup crumbled cotija cheese for garnish
INSTRUCTIONS
In a mixing bowl combine chicken, orange juice, lime juice, lime zest, bbq sauce, chili powder, cumin, smoked paprika, cayenne, and salt. Set aside to marinate.
In a sauce pan toast rice in butter and taco seasoning for 1-2 minutes.
Add 1 1/2 cups water and bring to a boil. Cover and reduce to heat to low. Simmer for 15-18 minutes.
Heat a Tbsp of oil in a large skillet on medium-high heat. Add peppers and onions. Season with a dash of salt and pepper. Saute for 6-8 minutes.
When veggies are starting to char, remove from skillet and transfer to a bowl.
Add another Tbsp of oil to the hot skillet. Add chicken and saute for 4-6 minutes until cooked through.
When rice is finished, fluff with a fork and spoon into bowls.
Top rice with veggies and chicken. Garnish with cilantro and cotija cheese.
You can also garnish with some pickled red onion : Sliced onion, lime juice, 1/4 tsp sugar and a dash of salt microwaved for 1 minute.
