Saltine Toffee

INGREDIENTS

  • 1 cup salted butter (use high quality butter with low water content)

  • 1 cup granulated sugar

  • 3 Tbsp water

  • 32 saltine crackers

  • 12 oz semi-sweet chocolate chips

  • 1/4 cup chopped almonds (toasted)

 

INSTRUCTIONS

  1. On a rimmed and parchment paper-lined baking sheet, place saltines in rows. Make sure the saltines are close together. It is best if they are wedged in snugly, but not necessary. 

  2. On medium-high heat, melt butter, sugar and water in a sturdy pot. Preferably treated cast iron. 

  3. Don’t stir until mixture begins to boil and foam. Stir occasionally after. BE CAREFUL! It will be crazy hot. 

  4. Cook until the mixture is 290 degrees on a candy thermometer or until it is the color of a paper bag. Who owns a candy thermometer? 

  5. Pour toffee over the saltines and spread evenly over the crackers with a spatula. Let cool until hard. 

  6. Melt chocolate chips in the microwave or double boiler. Pour chocolate over toffee and spread to the edges with a spatula. 

  7. While chocolate is still wet, sprinkle with toasted almonds. 

  8. Once chocolate is set and cool, break into chunks. 

  9. Bring it into the office so that you don't eat it all.
