Cheddar Beer Bread

INGREDIENTS

  • 3 cups of sifted flour (very important to sift)

  • 3 tsp baking powder

  • 1 tsp salt

  • 1/4 cup sugar

  • 12 oz can of light beer

  • 1 cup grated extra-sharp cheddar cheese

  • 1/4 cup melted butter

 

INSTRUCTIONS

  1. Preheat oven to 375 degrees and lightly grease an 8x4 inch loaf pan with butter or nonstick cooking spray. Line with parchment paper for easy removal from pan later.

  2. In a large mixing bowl stir together sifted flour, salt, baking powder and sugar.

  3. Pour in beer and cheese until a wet dough forms. Stir until combined. Don’t over work.

  4. Put dough in loaf pan and spread to edges with a spatula. Pour melted butter over the top of the dough.

  5. Bake for 60 minutes.

  6. Let the loaf cool 15 minutes before removing from pan. Turn loaf over onto wire rack to remove from pan. Flip over to be right side up to finish cooling.

This bread is very rich and biscuit like. If you want it to have a softer crust, mix butter into batter instead of pouring it on top.
