Kefta
INGREDIENTS
1 lb ground beef
1 lb ground lamb
1 large onion, grated
2 cloves of garlic, grated
1/4 cup fresh cilantro, finely chopped
1/4 cup fresh parsley, finely chopped
1 Tbsp fresh mint, finely chopped
3 tsp paprika
1 1/2 tsp ground cumin
2 tsp kosher salt
1/2 tsp pepper
1/2 tsp cayenne pepper
INSTRUCTIONS
In a large bowl combine all ingredients with your hands. Don’t over work the meat.
Form ground meat into 2-3 Tbsp balls.
Heat a non-stick grill pan over medium heat. No need for oil as the meat is pretty fatty. If using lean meat, start the pan with a Tbsp of canola oil.
Place balls are on the pan and press down to form a patty.
Fry in batches, 2-3 minutes on each side.
You could also wrap the meat around skewers and grill on a BBQ.
