INGREDIENTS

  • 1 lb ground beef

  • 1 lb ground lamb

  • 1 large onion, grated

  • 2 cloves of garlic, grated

  • 1/4 cup fresh cilantro, finely chopped

  • 1/4 cup fresh parsley, finely chopped

  • 1 Tbsp fresh mint, finely chopped

  • 3 tsp paprika

  • 1 1/2 tsp ground cumin

  • 2 tsp kosher salt

  • 1/2 tsp pepper

  • 1/2 tsp cayenne pepper

INSTRUCTIONS

  1. In a large bowl combine all ingredients with your hands. Don’t over work the meat.

  2. Form ground meat into 2-3 Tbsp balls.

  3. Heat a non-stick grill pan over medium heat. No need for oil as the meat is pretty fatty. If using lean meat, start the pan with a Tbsp of canola oil.

  4. Place balls are on the pan and press down to form a patty.

  5. Fry in batches, 2-3 minutes on each side.

You could also wrap the meat around skewers and grill on a BBQ.
